Mini Chicken and Ricotta Meatballs with Raspberry Dipping Sauce

Here is my take on my sister Joyce Cravedi’s recipe, but kickin’ it up a litlte—not quite as delicate as the original, but a great appetizer with this lively raspberry dipping sauce.

The Amazing Minis…chicken, ricotta and herbes, accented with a tangy raspberry dipping sauce!

Perfect for that first small tasting on an evening of dining—let the party begin!

1 lb ground chicken
1/3 cup of Ricotta
1 egg
1 C bread crumbs
2 Tbsp Amazing Herbes

Mix all ingredients together well. Roll heaping teaspoons of the chicken meatball mix and bake in 350° oven for 10 minutes. Remove to cool slightly, serve on tray with Raspberry Dipping Sauce.


Raspberry Dipping Sauce:
1 small jar fresh preservative-free seedless raspberry jam
1/4 cup raspberry vinegar

Gently simmer jam and vinegar together and add a squeeze of fresh lemon. Cool slightly and serve with mini meatballs.

The original recipe is from the kitchen of Joyce Cravedi and raspberry vinegar we were lucky enough to get our hands on harkens from the gardens and kitchens of Gregory Cravedi – a match made in heaven!
