This recipe is inspired by requests from busy Mom’s asking what they can make that is soooo delicious, but soooo packed with good energy sources. Somehow there seems to be a divided highway in the food world of “good for you” OR “tastes good”. Well, I am here to tell you that this is a lane crosser! This recipe is for a great Bran Muffin that is loaded with taste and very moist, (hard to do with Bran Muffins). The tenderness here is achieved from adding a whole cup of *Spiced Peaches pureed, (or use fresh or canned peaches or substitute *mashed bananas for the fruit)

and the delicate sweetness come from pure Maple Syrup, the sweetener of our forefathers! Now here is where a “little wrong” makes a “big right”, the spiced peaches used today are from South Carolina (McLeod’s best), they were canned last fall in a little maple syrup and French Brandy…..yes, wrong = RIGHT! Now, the truth is, canned peaches, fresh peaches….any kinda peaches, they all work wonderfully! Go get your energy fix prepared in deliciousness! (These freeze wonderfully)
HERE IS MY DISCLAIMER: Definitely purchase unprocessed Bran and Wheat Germ (available any health food store and most grocery stores) on the rest of the ingredients, work with what you have and substitute away, amazing what creativity can do!

BRAN MUFFINS WITH SPICED PEACHES
AND A CRUMBLE TOPPING
Love food that fuels you body and soul! Here it is the perfect fiber rich breakfast launch, snack or answer to that 4 o’clock refueling. These delicious muffins are packed with bran, wheat germ and great flavors of spiced peaches(I use spiced brandied peaches, or fresh or canned peaches work as well). The Crumble topping makes the masquerade complete, good for you but so delicious! Yeah, it’s a health food win-win!

MUFFINS; makes 12-15
Ingredients:
2 large eggs
½ C Maple Syrup
1 cup mashed spiced peaches
(or sub 1 cup mashed bananas)
1 cup yogurt or buttermilk
1 cup unprocessed wheat bran
2 Tbsp wheat germ
¼ vegetable oil
1 tsp vanilla extract
1 cup whole-wheat flour
¾ cup of all-purpose flour
1 ½ tsp baking powder
½ tsp baking soda
¼ tsp salt
½ tsp *Pummull spice or cinnamon
½ cup chopped walnuts or pecans
*Kitchen’s Bounty Pummull spice is a blend of Cinnamon, Ginger, Nutmeg, Allspice, Cloves, Mace and Cardamon! Our House Baking Seasoning! Available on line

Crumble: (optional)
½ C brown sugar
½ C flour
¼ C butter (cut in small pieces)
½ C oatmeal
¼ tsp Cinnamon
Place ingredients in a bowl, and stir with fork until crumble develops. (Use approx
Heaping teaspoon on each muffin before baking)

Preheat Oven to 375 degrees F. Coat 12 muffin cups with cooking spray.
Whisk eggs and maple syrup in a bowl until smooth, whisk in mashed fruit, yogurt, wheat bran, wheat germ, oil and vanilla.
Whisk flours, baking powder, baking soda, cinnamon and salt in a large bowl. Add wet to dry ingredients, Stir in any chopped fruit or nuts, ect. Scoop batter into muffin tins, sprinkle with the crumble.
Bake the muffins until top are crunchy golden, and spring back when lightly touched. 20-25 minutes. Let cool a few minutes in pan, remove from pan to cool on wire rack. ENJOY!
